Noth Indian Base

The north Indian dishes are similar to the bengali mix with the inclusion of garam masala. The garam masala can be made out of whole garam masala (Bay leaf-1 , cloves-2, cardamom- 1/2 stick) or the garam masala mix which can be bought from any Indian market.

  • Oil- 1tsp
  • Mustard/Cumin seeds – 1 tabsp
  • Onions- 1 cup
  • Tomato- 1 cup
  • Turmeric powder- 1tsp
  • Chilli powder- 1tsp
  • Garam masala- 1 tsp
  • Ginger- 1tsp
  • Garlic-1tsp
  • Green chillies

Preparation:

Heat up oil and put the seeds after 2 minutes and let it splutter in medium low heat.
Add the ginger, garlic, green chillies and stir fry for 2 more minutes.
Add in the onions till they are golden brown and add in the tomatoes, tumeric powder, chilli powder, garam masala and salt to taste and fry till the oil oozes out from the mixture.

Veg Biriyani

Servings:- 2

Ingredients:-

  • Oil/Ghee- 2 tablespoon
  • Mustard- 1 teaspoon
  • Garam Masala- 2 cloves,2 cardamom, 1 bayleaf, 1 tsp cumin seeds.
  • Garlic cloves- 1 or 2 cloves
  • Dried Red chillies-  to taste
  • Ginger paste- 1 teaspoon
  • Onions- 2 nos.
  • Tomato puree-1 cup
  • Coriander powder- 3 teaspoon
  • Turmeric powder- 2 teaspoon
  • Chilli powder-1 tablespoon (to taste)
  • Curd/Yogurt-1 cup
  • Coconut milk (Optional)- 1 tablespoon
  • Vegetables- Potato, Brocolli, Capsicum, Onion leaves. (to taste)

Preparation:-

Grind all the masala to prepare the garam masala mix.

Add oil in a deep pan, and put the mix, garlic cloves, ginger paste, onions.

Fry till onions are golden brown

Add the tomato puree and fry till the oil from the mixture starts oozing out.

Add the vegetables and fry with a lid and at medium ow flame for 10 minutes.

Pour the turmeric powder, chilli powder, salt, coriander powder and add the curd, coconut milk. Fry for 5 minutes.

Pour the rice and cover the vessel and heat the mixture for 10 minutes at low flame.

Zucchini Rice

Zucchini Rice is a very soothing, healthy rice recipe for all ages.

Servings:- 2

Ingredients:-

  • Zucchinis- 2 nos. (medium size shredded)
  • Mustard Seeds- 1 tsp
  • Cumin seeds- 1 tsp
  • Salt- 1 tsp
  • Oil/Butter/Ghee- 1tablespoon
  • Red/ Green Chilli- to taste
  • Garam Masala- 1 tsp
  • Garlic- 1 no.
  • Ginger- 1/2 tsp
  • Rice- 2 1/2 cups
  • Water- 1cup

Preparation:-

Add the rice and water and let it settle for 15 minutes. Add oil to a pan and when it is hot, add mustard, cumin, red/green chilli, garlic,ginger. Saute them for 2 minutes and add the zucchinis and saute for 5 minutes. Add the garam masala and salt and the rice and water mixture and boil at medium heat till the rice is cooked.

Tips:-

The zucchini is a bland vegetable so the taste you give it, it will just soak in the taste. So its one of the easiest vegetables for experiments.I have served this with sambhar/dal/lentil. Let your imaginations flow..


Spinach Rice

Spinach is a great source of multi-vitamins. The very famous Popeye the sailor man is a great way to attract kids eating spinach but the most important thing is to make it taste good. SO how to do that? lets see it!!

Servings:-2

Ingredients for the spinach curry (This can be eaten separately with roti/bread/etc.):-

  • Spinach- 100 gms
  • Onions- 2 medium sized
  • Tomato puree- 1 cup
  • Mustard- 1tsp
  • Koriander seeds- 1tsp
  • Cumin seeds- 1 tsp
  • Butter- to taste (start from 1 tablespoon)/ oil
  • Salt- to taste
  • Garam masala- 1tablespoon
  • Water- 1 cup
  • Lemon juice- 3-4 drops

Preparation:-

Add oil in a deep pan (cook preferably in a nonstick pan) and once the oil gets heated add the mustard, jeera and cumin seeds. Then add the onions and fry till golden brown. Add the tomato puree into the mixture and fry it with a closed lid at medium heat until the oil starts oozing from the mixture. Add the spinach and fry. Once the spinach is fried for sometime, add salt to taste and water and heat for 10 minutes.Sprinkle drops of lemon juice and garnish with coriander leaves.

Rice:-

If spinach rice is to be made, then after cooking the rice completely add the rice to the spinach curry and warm for 5 minutes. Most probably it will be needed to add some more water. Garnish with curd or cheese on top.

Tips:

Be careful to add the salt sensibly. If the spinach has too much salt the curry is wasted. Adding lemon juice can help the situation at times.

Döner rice

Döner literally means Rotating Roast which is made out of stacked lamb meat. This dish can be easily made in Germany or Turkey since this is easily available here. In India they are available as kebabs.

Ingredients:-

  • Döner  – 250 gms
  • Peas- 50 gms
  • Onions- 2 medium sized
  • Tomato puree- 1 cup
  • Mustard-1 tsp
  • Jeera- 1 tsp
  • Cumin seeds- 1tsp
  • Butter- to taste (start from 1 tablespoon)
  • Salt- to taste
  • Hyderabadi biriyani masala-2 tablespoon
  • Garam masala- 1tablespoon
  • Water- 1 cup
  • Lemon juice- 3-4 drops

Preparation:-

Add oil in a deep pan and once the oil gets heated add the mustard, jeera and cumin seeds. Then add the onions and fry till golden brown. Then add the tomato puree into the mixture and fry it with a closed lid at medium heat until the oil starts oozing from the mixture. Add the biriyani masala, garma massla and add the peas and the döner and fry. Add salt to taste and heat for 10 minutes. Then add the rice and fry the entire mixture for 5 to 8 minutes.  Sprinkle drops of lemon juice and garnish with coriander leaves.

Tips:

Egg can be added to this dish to make it more tasty and can be eaten with curd.The remaining doner mixture can be added with egg and a döner egg is ready!!
