Eggplant and Sweet potato Fry/Begun, rangaloo bhaaja

Who does not like tasty, healthy vegetables which can be cooked within minutes? This is such a recipe which can be eaten as a fry substitute with your rice or as a snack, just as any way.

Servings:- Depends!!

Ingredients:-

  • Salt- 1 tsp
  • Sugar- 1 tsp
  • Eggplant- cut into slices
  • Sweet potato
  • Chili powder- to taste
  • Water – depends on the paste
  • Oil- 2 tablespoons

Preparations:-

Cut the Eggplant and Sweetpotatoes in the way you want to.

Add all the other ingredients.

Heat oil in a pan and place the vegetables into it and fry for 15 minutes.

Cook with the lid, since it takes time for the sweet potato to soften.

Beguni/ Brinjal Fritters

From Beguni/Brinjal Fritters

This one is for my mother. It is my mother’s favorite appetizer. I am sure the time she sees this, her mouth is gonna water. Its because of her that we had to eat this almost everytime we went to our grandparents place and thanks to her I have been able to come up with this recipe which has a slight twist to it.Its an extremely tasty appetizer with a tangy sauce.

The chana dal flour is made by grinding the chana dal in a processor.

Servings:- 2

Ingredients:

  • Chana dal flour- 2 tablespoon
  • Salt- 1 tsp
  • Brinjal/Baingan- cut into slices
  • Chili powder- to taste
  • Water – depends on the paste
  •  Oil- 1 cup /10 tablespoon     

Preparation:-Mix all the ingredients together to form a paste. Heat the oil in a pan. Take a handful amount of the paste with the brinjal and carefully place it into the oil. Fry them and keep aside over a plate and serve with tomato ketchup, green chutney, red chutney or any dip.

Rice Flour Onion fritter

The rice flour can be quickly made by just powdering the rice in a food processor.

Servings:- 2

Ingredients:

  • Rice flour- 2 tablespoon
  • Salt- 1 tsp
  • Onion slices
  • Chili powder- to taste
  • Water – depends on the paste
  •  Oil- 1 cup /10 tablespoon     

Preparation:-Mix all the ingredients together to form a paste. Heat the oil. Take a handful amount of the paste with the onion and carefully place it into the oil. Fry them and keep aside over a plate and serve with tomato ketchup, green chutney, red chutney or any dip.

Capsicum Toor Dal Vada/Fritters

Vada is a lentil/dal fried fritter which is made from chana dal.

Servings:- 2

Ingredients:

  • Channa dal- finely ground dal 1 cup
  • Salt- 1 tsp
  • Capsicum-1/2 nos.
  • Chili powder- to taste
  • Garam Masala- 1 tsp
  • Garlic- 1 no.
  • Onion- 1/2 no. grounded
  • Ginger- 1/2 tsp
  • Water – depends on the paste
  •  Oil- 1 cup /10 tablespoon     

Preparation:-

Mix all the spices, garlic, ginger, onion and salt with the ground chana/toor dal with water to form a fine paste. Add oil to a pan and let it heat. Take a handful amount of the paste with the capsicum and put it into the oil. Fry them and keep aside over a plate and serve with tomato ketchup, green chutney, red chutney or any dip.

Vada is a lentil/dal fried fritter which is made from chana dal.
