Eggplant and Sweet potato Fry/Begun, rangaloo bhaaja


Who does not like tasty, healthy vegetables which can be cooked within minutes? This is such a recipe which can be eaten as a fry substitute with your rice or as a snack, just as any way.

Servings:- Depends!!

Ingredients:-

  • Salt- 1 tsp
  • Sugar- 1 tsp
  • Eggplant- cut into slices
  • Sweet potato
  • Chili powder- to taste
  • Water – depends on the paste
  • Oil- 2 tablespoons

Preparations:-

Cut the Eggplant and Sweetpotatoes in the way you want to.

Add all the other ingredients.

Heat oil in a pan and place the vegetables into it and fry for 15 minutes.

Cook with the lid, since it takes time for the sweet potato to soften.

  1. Add the sugar later.. when it is half cooked.. adding sugar right at the start will bring in too much moisture, delay the cooking and prevent being crispy enough.. add it at the end and u’ll get a nice crispy caramelized exterior.
