Spinach is a great source of multi-vitamins. The very famous Popeye the sailor man is a great way to attract kids eating spinach but the most important thing is to make it taste good. SO how to do that? lets see it!!

Servings:-2

Ingredients for the spinach curry (This can be eaten separately with roti/bread/etc.):-

  • Spinach- 100 gms
  • Onions- 2 medium sized
  • Tomato puree- 1 cup
  • Mustard- 1tsp
  • Koriander seeds- 1tsp
  • Cumin seeds- 1 tsp
  • Butter- to taste (start from 1 tablespoon)/ oil
  • Salt- to taste
  • Garam masala- 1tablespoon
  • Water- 1 cup
  • Lemon juice- 3-4 drops

Preparation:-

Add oil in a deep pan (cook preferably in a nonstick pan) and once the oil gets heated add the mustard, jeera and cumin seeds. Then add the onions and fry till golden brown. Add the tomato puree into the mixture and fry it with a closed lid at medium heat until the oil starts oozing from the mixture. Add the spinach and fry. Once the spinach is fried for sometime, add salt to taste and water and heat for 10 minutes.Sprinkle drops of lemon juice and garnish with coriander leaves.

Rice:-

If spinach rice is to be made, then after cooking the rice completely add the rice to the spinach curry and warm for 5 minutes. Most probably it will be needed to add some more water. Garnish with curd or cheese on top.

Tips:

Be careful to add the salt sensibly. If the spinach has too much salt the curry is wasted. Adding lemon juice can help the situation at times.
