Coconut cookies/ Narkel Nadu

One of the easiest, fastest and tastiest sweet dish.

Ingredients:-

  • Coconut Grated- Depending on the quantity required. for 20 ball, 150 gms.
  • Condensed milk- 4 tablespoons.
  • Sugar- to taste, 3 tablespoons.

Preparation:-

  • Saute the coconut till golden brown.Do not burn the coconuts keep stirring to avoid it.
  • Add sugar and saute for 5 minutes.
  • Then add the condensed milk and cook with closed lid for 10 minutes.

  • Cook it in a dish and make round balls or any other shape.

Aloo Bora

Servings:-2

Ingredients:-

  • Potato- 2 medium size cut in thin strips
  • Lentil Dumplings- depends on your taste
  • Chilli powder- 1tsp
  • Salt-1 tsp
  • Mustard and Green chilli paste- ground in a food processor (1 tsp and 2 nos.)
  • Oil- 4 tablespoon for cooking and frying
  • Turmeric powder- 1 tsp

Preparation:-

Make a paste of Chana dal flour, chilli powder and salt and make small balls in your hands and pour them into the heated oil. Fry them till red and then keep them aside in a paper towel.

Then fry the potatoes for sometime. then add some chilli powder, salt to it once fried.

Then add the lentil (chana dal) dumplings. Make a paste of the mustard seeds and green chillies and pour with the potatoes and the dumplings. Fry this mixture for 5 minutes and add water (depending on the requirement).

Tips:-

It is a very delicious dish because of the tangy taste of the mustard. Its extremely spicy and remember not to overgrind the mustard as that might bring a bitter taste to the dish. If it doesn then add some drops of lemon juice to it, to cover up the taste a bit. But remember it does not cover the bitter taste completely if its too bitter.

Water melon Bliss

Beat the summers with this healthy, spicy juice!!

Ingredients:-

  • Water melon juice- 1 glass
  • Salt- 1 tsp
  • Sugar- 1 tsp
  • Ground cumin seeds – 1/2 tsp
  • Lemon juice- 1 tablespoon

Preparation:-

Pour the water melon juice into a glass, add the salt, sugar, lemon juice and sprinkle with cumin powder on top. Drop some ice cubes and just enjoy!!

Tips:-

The cumin powder is a very healthy powder for majorly improving digestion. Healthy and tasty!!

Puff Roll

Serving:- 1

Ingredients:-

  • Puff pastry/ Blätterteig
  • Onion leaves
  • Cheese- 1 slice
  • Fresh cheese/Speisequark- 1 tablespoon
  • Chilli powder- 1tsp
  • Salt-1 tsp
  • Mashed Potato – 1/2 No

Preparation:-

Combine the mashed potato with salt and chilli powder.Take the puff pastry, the dough and spread the cheese (speisequark) and sprinkle the onion leaves, cheese, mashed potato.

Cut a length long rectangular piece of the puff pastry and roll it up to form a round structure. I heated it in a deep pan, on the stove at low flame. People with an oven can bake it, the result will be better.

Tips:-

I added sweet potato, which was ordinary so did not add that in the recipe. You can add it if you do not mind the sweet taste in a puff.

Chickpea in a saucy coconut curry

Ingredients:-

  • Oil- 4 tablespoon
  • Mustard- 1 tsp
  • Garlic- 2 cloves
  • Onion Paste- paste of half of the onion
  • Onion-1/4th no.
  • Chilli powder- 2 tsp (to taste)
  • Coriander powder- 1 tsp
  • Garam Masala- 2 tsp
  • Pav Bhaji Masala- 2 tsp
  • Tomato paste with red chillies/Pesto Rosso- 1 tablespoon
  • Chickpeas- 1 cup
  • Capsicum-1/2 no.
  • Onion Leaves- to taste
  • Fenugreek Leaves- 2 tablespoon
  • Coconut milk- 1/4th can

Preparation:-

Add oil to the deep pan with mustard seeds, garlic cloves, onion paste, tomato pesto rosso and onions. Saute for 5 minutes.

Add the Chickpeas, chilli powder, coriander powder, pav bhaji masala, fenugreek leaves and fry for 5 minute.

Add the coconut milk and boil for 15 minutes.

Tip:-

The addition of the fenugreek leaves gives a characteristic taste to the dish. Do try it and explore with other vegetables. :)

Tasty, Spicy Bread Crumbs/Bread Chivda

Ingredients:-

  • Salt- 1 tsp
  • Bread- 2 peices
  • Onion- 1/4th no.
  • Chili powder- to taste
  • Sugar-1/2tsp (optional)
  • Mustard Seeds- 1 tsp
  • Curry leaves- 1 twigs
  • Water – depends
  • Oil- 2 tablespoons

Preparation:-

Cut the bread into pieces and sprinkle some water and then add salt, chilli powder, sugar and mix them.

Heat oil in a pan, add the mustard and curry leaves.


Then add the bread mixture into it and fry for 15 minutes.


Cook it with the lid and fry till it gets crunchy.

Aloo Samosa

Hot samosas with indian tea, there cannot be a better combination on a beautiful cloudy day!!

Servings:- Depends!!

Ingredients:-

  • Salt- 1 tsp
  • All purpose flour- 2 cups
  • Chili powder- to taste
  • Water – depends on the dough
  • Oil- 20 tablespoons (Dont worry all the oil is not going to be used up)

Preparations:-

Make a dough from the all purpose flour and water. Make cone shapped structures of the dough.

Fill it up with potato fillings (mashed potato with chilli powder and salt) and cover and form

            

Heat the oil at high flame and put the samosas into the oil and fry till they become golden brown

Serve with a green chutney or red chutney or ketchup or any dip. Enjoy!!

Eggplant and Sweet potato Fry/Begun, rangaloo bhaaja

Who does not like tasty, healthy vegetables which can be cooked within minutes? This is such a recipe which can be eaten as a fry substitute with your rice or as a snack, just as any way.

Ingredients:-

  • Salt- 1 tsp
  • Sugar- 1 tsp
  • Eggplant- cut into slices
  • Sweet potato
  • Chili powder- to taste
  • Water – depends on the paste
  • Oil- 2 tablespoons

Preparations:-

Cut the Eggplant and Sweetpotatoes in the way you want to.

Add all the other ingredients.

Heat oil in a pan and place the vegetables into it and fry for 15 minutes.

Cook with the lid, since it takes time for the sweet potato to soften.

Easy, Crispy Bread Fritters/Pakora

Servings:- 2

Ingredients:

  • Chana dal flour- 2 tablespoon
  • Salt- 1 tsp
  • Bread- cut into slices
  • Chili powder- to taste
  • Water – depends on the paste
  • Onion-1/4 no.
  •  Oil- 2 tablespoons

Preparation:-

Mix the ingredients, Chana dal Flour,Salt, Chilli powder, Onion together to form a paste.

Take a handful amount of the paste with the Bread and carefully place it into the oil.

Fry them and keep aside over a plate and serve with tomato ketchup, green chutney, red chutney or any dip.

South Indian Base for most of the South Indian Dishes

South Indian cooking involves a larger number of spices!! So if your planning to make a Southy today, be prepared to do some extra spice shopping.

Ingredients:-

  • Oil/Ghee- 1tsp
  • Mustard- 1 tsp
  • Channa dal- 1 tsp
  • Curry leaves- 2 twigs
  • Garlic cloves- 1 or 2 cloves
  • Dried Red chillies-  to taste
  • Grounded Coconut (Optional)- to taste

Preparation:-

Heat oil/ghee and season mustard (let it splutter) and add white gram dal, dried red chillies and curry leaves. Add the grounded coconut. Sauté for 5 minutes.This is the very basic south Indian base. The south Indian dishes have more variety and quite a few addition and subtractions but using these basic ingredients can be helpful in developing a strong mystic south Indian flavour to your dishes.

Tip:-

The trick is in heating ghee (clarified butter) for 2 minutes and then adding the garlic and the curry leaves. In some dishes black pepper is also used. This brings in a very strange spicy but soothing effect to your dishes. Try it out!! I have not yet found a substitute for this base recipe for the foreigners. If anyone has found, do let me know.
